Channa Masala:

Ingredients

  • 500 gm chickpeas, soaked overnight and boiled
  • 4-5 sprays Sunflower cooking spray
  • 2 small onions, chopped
  • 1 medium tomato, chopped
  • 1 bay leaf
  • 1 tbsp garam masala powder
  • 1 tbsp cumin powder
  • 1 tbsp turmeric powder
  • 1 tbsp red chilli powder
  • salt to taste
  • 200 ml water
  • coriander leaves, for garnish

Method:

  • Heat kadhai and add 4-5 sprays into it.
  • Add chopped onions and sauté.
  • Add chopped tomatoes, bay leaf, garam masala, cumin powder, turmeric powder, chilli powder, and salt as per taste.
  • Sauté well and add 200 ml water.
  • Cook the mixture well and add boiled chickpeas, coriander powder, and cumin powder.
  • Cook on medium heat for 15 minutes, and garnish with coriander leaves.

Butter Chicken

Ingredients

  • 300 gm chicken, boneless
  • 6-8 sprays cooking spray ghee
  • 1 tbsp cumin seeds
  • 2 tbsp garlic, chopped
  • 1 onion, chopped
  • 2 cups tomato puree
  • 1 tbsp chilli powder
  • 1 tbsp turmeric powder
  • 1 tbsp garam masala powder
  • 1 tbsp coriander powder
  • 1 tbsp cumin powder
  • 1 tbsp butter, for garnishing

For Marination:

  • 2 tbsp red chilli powder
  • 2 tbsp garam masala powder
  • 2 tbsp cumin powder
  • 2 cups hung curd

For cashew paste:

  • 50 gm cashew nuts
  • 50 gm char magaz seeds
  • 1 medium onion

Method:

  • Heat the kadhai and add ghee spray to it.
  • To prepare onion spray, sauté cumin seeds, chopped garlic, onions, and tomatoes with some ghee spray.
  • Add tomato puree and onion paste to kadhai.
  • Add 1 tbsp each of chilli powder, turmeric powder, garam masala, coriander powder, and cumin powder into the gravy and cook well for a few minutes.
  • Pre cook the tandoori chicken by marinating it for three to four hours with 2 tbsp each of red chilli powder, garam masala powder, cumin powder and mix it in hung curd. Roast the marinated chicken till cooked properly.
  • Add the tandoori chicken pieces to the gravy.
  • Make cashew paste by boiling the nuts, char magaz seeds, and onions. Blend it into a fine paste.
  • Add paste to the gravy.
  • Cook on medium heat for 15 minutes, and garnish with butter.

Ingredients:

  • 4- sprays Sunflower cooking spray
  • 400 gm rajma, boiled
  • A pinch of cumin seeds
  • 3 star anise
  • 10 gm garlic, chopped
  • 1 large onion, chopped
  • 3 tbsp ginger-garlic paste
  • green chillies, as per taste
  • 20 gm tomato puree
  • 1 tbsp red chilli powder
  • 1 tbsp coriander powder
  • 1 tbsp garam masala powder
  • Salt, to taste
  • 300 ml water

Method:

  • Heat the pan and add sunflower cooking spray to it.
  • Add cumin seeds, star anise, garlic, onion, ginger-garlic paste, green chillies, tomato puree, red chilli powder, coriander powder, garam masala and mix well.
  • Cook well for a few minutes.
  • In another kadhai add 1-2 sprays of cooking spray and shifty the prepared masala from the cooking pan into the kadhai.
  • Add the boiled rajma and salt to taste.
  • Mix well and add water.
  • Cover the lid and cook from 15-20 minutes.
  • Serve hot with steamed basmati rice.
