Chick pea, goats cheese and cranberry salad

Ingredients

  • 1/2 cup cooked chick peas
  • 1 cup each mixed greens (iceberg lettuce, arugula and romaine lettuce)
  • 1/2 cup dried cranberries
  • 1/2 cup goat cheese
  • 1 tbsp pinenuts

Dressing

  • 1 tbsp olive oil
  • 1/4 cup orange juice  
  • 1 tsp apple cider vinegar
  • 1/2 tsp garlic powder
  • 1 tsp mustard
  • Cracked black pepper
  • Salt
  • 1 tsp honey
  • Whisk together till blended well.

Method

  • Put mixed greens in a bowl and toss with cranberries and chick peas.
  • Crumble goats cheese on top.
  • Add dressing and toss together.
  • Sprinkle with pine nuts. Serve.
