Entrepreneur Mitali Tandon shares her favourite Chicken, mango and chilli salad inspired by Nigella Lawson’s take on the coronation salad.

Chicken, mango and chilli salad

Ingredients

  • 1 ripe mango (cut into small cubes) or two small pears
  • 1 spring onion (finely chopped)
  • 1 to 2 red chillies (or to taste -deseeded and finely chopped)
  • Juice of 2 limes (to taste)
  • 1 cold cooked chicken breast (cut into chunks)
  • 1 small lettuce (sliced or shredded) I love Kale and sometime’s add in a few leaves to give it more character.
  • 1 large handful of fresh coriander (chopped)
  • 1 tsp groundnut oil
  • 4 drops toasted sesame oil

Method
Throw in mango cubes (and any juice with it) into a bowl. With your hands, mix in chopped spring onions and chilli, squeeze over lime juice: use as much or as little as you want, I prefer it zesty and it varies based on the nature of lime/lemon. Leave all these aside to soak in the flavour while your shred and chop the lettuce. Tumble in the chunked chicken and shredded lettuce, and most of the fresh coriander (using your hands), then toss to combine. Add oils and toss again. Then transfer on to a large serving plate and sprinkle the remaining fresh coriander and serve.
