Vanilla in a cuppa!

Kavitha, a self-taught baker, shares an easy cup cake recipe for that high tea you might be thinking of having.

Vanilla Cupcakes
Ingredients

  • 200 gm all purpose flour
  • 200 gm butter
  • 200 gm sugar
  • 3 eggs
  • 1.5 tsp baking powder
  • 1/4 cup milk
  • 1 tsp vanilla extract

Method

  • Cream butter and sugar until light and fluffy.
  • Add eggs one at a time, and beat well with each addition.
  • Add flour, baking powder, milk and vanilla and beat/mix until you get a dropping consistency.
  • Pour into cupcake liners (this recipe yields 12-18 cupcakes depending on size) and bake at 180 degrees C for 15-20 mins or until a toothpick comes out clean.
  • Decorate with basic vanilla buttercream.
