Rajasthan: Holi is just around the corner and no festivity in India is considered to be complete without a sweet dish. Almond and coconut cake is all that you need this festive season to satiate your taste buds.

Almond and coconut cake

Ingredients

200 gm desiccated coconut

250 gm sugar

100 gm almond slice

400 gm butter

20 gm vanilla essence

200 gm almond powder

1.0 gm vanilla pod

10 gm  salt

20 gm staranies and Cinnamon Powder

500 gm milk

300 gm cream

400gm icing sugar

20 gm baking powder

50 gm brown sugar

Step 1

Pre-heat oven to 350°F and melt the butter to make them easier to break down and put them in the mixing bowl of the food processor, fitted with the metal blade, with the sugar.

Step 2

Process until it combines pretty well and becomes smooth. Add vanilla extracts, process again, then break the eggs one at a time, processing again each time.

Step 3

Mix the flour almond slice baking powder almond flour a, processing yet again, and then pours the mixture into the prepared pan, scraping the sides and bottom of the bowl with a rubber spatula.

Step 4

Bake for 50 minutes but check from 40.

Step 5

When the cake looks golden and cooked with the help of cake tester or fine skewer, remove from the oven and leave to cool in the pan before turning out.

Step 6

Serve with ice cream and chocolate sauce.
