Keto Coffee Cake

Ultimate Keto Coffee Cake

For the Base:

  • 6 large eggs (separated)
  • 6 Oz. cream cheese
  • ¼ cup erythritol
  • ¼ tsp liquid stevia
  • ¼ cup unflavored protein powder
  • 2 tsp vanilla extract
  • ¼ tsp cream of tartar
  • Filling
  • 1-½ cup almond flour
  • 1 tbsp cinnamon
  • ½ stick butter
  • ¼ cup maple syrup substitute
  • ¼ cup erythritol

Method:
Preheat your oven to 325 F. If you’re using a glass baking dish, use 300 F.

Seperate eggs from egg whites for all six eggs. Cream together egg yolks with 1/4 cup erythritol and 1/4 tsp  liquid stevia.

Once egg yolks are creamed, add 6 oz cream cheese and 1/4 cup unflavored protein powder. Mix together well until a thick batter forms.

Beat egg whites together with 1/4 tsp cream of tartar until stiff peaks form.

Fold egg whites into egg yolk mixture, doing 1/2 of the egg whites first, then the other half. Pour batter into a round cake pan.

Mix together all “filling” ingredients: 1-1/2 cup almond flour, 1 tbsp cinnamon, 1/2 stick butter, 1/4 cup maple syrup, and 1/4 cup erythritol. This should form a “dough” of sorts. Take half, rip off little pieces to top the cake – push pieces down if they don’t sink on their own.

Bake for 20 minutes, top with rest of the cinnamon filling. Bake for another 20-30 minutes until a toothpick comes out clean. Cool for 20 minutes before removing.

Ketos Garlic Bread

Ingredients:

  • Bread
  • 1¼ cups almond flour
  • 5 tbsp ground psyllium husk powder
  • 2 tsp baking powder
  • 1 tsp sea salt
  • 2 tsp apple cider vinegar or white wine vinegar
  • 1¼ cups boiling water
  • 3 egg whites
  • Garlic butter
  • 4 oz butter, at room temperature
  • 1 garlic clove, minced
  • 2 tbsp fresh parsley, finely chopped
  • ½ tsp salt

Method:
Preheat oven to 350°F (175°C). Mix dry ingredients in a bowl.

Bring water to a boil and add this slowly with vinegar and egg whites, whisking with a hand mixer for about 30 seconds. Don’t overmix the dough, the consistency should resemble Play-Doh, so add only that much boiling water.

Form with moist hands into 10 pieces and roll into hot dog buns. Make sure to leave enough space between them on the baking sheet to double in size.

Bake on lower rack in oven for 40-50 minutes, they’re done when you can hear a hollow sound when tapping the bottom of the bun.

Make the garlic butter while the bread is baking. Mix all the ingredients together and put in the fridge.

Take the buns out of the oven when they’re done and leave to let cool. Take the garlic butter out of the fridge. When the buns are cooled, cut them in halves, using a serrated knife, and spread garlic butter on each half.

Turn your oven up to 425°F (225°C) and bake the garlic bread for 10-15 minutes, until golden brown. You can use flax seeds in the bread, also add jalapenos or olives.
