Egg salad

Ingredient

  • 4 eggs, boiled
  •  onions, finely chopped
  • 4 green chillies,
  • finely chopped
  • 1 tsp jeera powder
  • Salt to taste
  • 1 tsp lemon juice

Method

Cut the eggs in half and remove the yellow from all the eggs and set the egg whites aside.
Mix the onions, green chillies, jeera powder and salt with the egg yolks.
Now stuff this mixture into the eggs whites. Top it with some lemon juice and serve.

Lobia meat balls

Ingredient

  • ½ cup keema
  • ½ cup lobia, soaked and
  • grounded
  • 1 onion, chopped
  • 4 green chillies, chopped
  • 1 tbsp
  • coriander,
  •  finely chopped
  • ½ tsp garam masala powder
  • ½ tsp chilli powder
  • Salt to taste
  • 1 tsp turmeric powder
  • 1 tsp ginger, finely chopped
  • 1 tsp garlic, finely chopped
  • 1 egg, beaten
  • Oil for deep
  • frying

Method

In a bowl, mix all the ingredients thoroughly except the oil. Heat the oil in a pan.
Make small round balls with the mixture and deep fry till brown in colour. Serve hot with green chutney.

Green garelu

Ingredient

  • 1 cup black gram dal, soaked overnight
  • 2 bunches spinach, boiled and mashed
  • 4 green chillies, finely chopped
  • ½ tsp jeera
  • Salt to taste
  • Oil for deep frying

Method

Grind the soaked black gram dal to a thick consistency. Now add the spinach, jeera, green chillies and salt to taste. Make small balls with the mixture and keep it aside.
Heat oil in a pan and deep fry the balls till golden brown in colour. Serve hot with peanut chutney.

Pesarattu Egg roll

Ingredient

  • 1 cup green moong dal, soaked and grounded
  • 1 egg
  • Salt to taste
  • 1 tomato, chopped
  • 1 onion, chopped
  • 1 tsp cumin
  • 1 tsp coriander, chopped
  • 1 tsp green chilli, chopped
  • 2 tbsp oil

Method

To the moong dal add cumin, salt, chopped coriander and chopped chilles. Mix well.
Spread the mixture on a hot tawa. Add some oil on the edges and fry it like a parantha.
Break an egg on it and add tomatoes and onions. Fry over medium heat.

Lentil Hummus

Ingredient

  • 1 cup whole masoor dal, cooked
  • 1 cup carrot, grated
  • 4 cloves of
  • garlic
  • ½ cup slightly roasted sesame seeds powder
  • 2 tbsp
  •  cold pressed
  • olive oil
  • 2 tbsp
  • red chilli
  • Salt to taste

method

Combine all the ingredients in a food processor and pulse, so that the mixture has some texture. Do not make a smooth paste.
You can serve the hummus as a dip for cut vegetables or as a spread on toast or roll into a chapatti to make a healthy dish.

Superfood berry Phalsa drink

Ingredient

  • 1 cup phalsa berries
  • 2 cups coconut water
  • 2 tbsp honey
  • Few ice cubes  

Method

Crush berries in a blender along with coconut water.
Strain and mix in honey.
Add ice cubes before serving.
