COUSCOUS AND PEARL BARLEY SALAD

With taste comes our concern for health. What appeals to the mouth must do well for the tummy too. Here are a few recipes from Good Food Cafe at Pitampura in New Delhi that health freaks can try out using easy available ingredients.

COUSCOUS AND PEARL BARLEY SALAD

Ingredients:

  • Couscous- 100 gm
  • Garlic - 5 gm
  • Water - 100 ml
  • Barley -50 gm
  • Baby spinach - a few leaves
  • Snow peas - 25 gm
  • Broccoli - 25 gm
  • Anardana - 5 gm
  • Bajra puff - 5 gm
  • Oil - 30 ml
  • Lemon juice - 5 ml
  • White pepper - 2.5 ml
  • Salt - as per taste
  • Caster sugar- 5 ml
  • French mustard - 5 ml

Method:

  • Soak barley overnight and boil for 30 minutes.
  • Heat oil in a pan, add garlic, sauté and then add couscous and water, cook for 5-6 minutes chill, keep aside.
  • Blanch snow peas and broccoli in hot water for 2 minutes, cool , keep aside.
  • Add olive oil, salt, pepper, sugar, mustard, lemon juice in a mixing bowl and stir well.
  • Add all the ingredients in to this dressing.
  • Top with bajra puff & pomegranate.
  • Serve chilled.

MIX FRUIT SHAKE

Ingredients

  • Fresh fruits - 1½ spoon
  • Ice cubes - 2 or 3
  • Crushed strawberry -25ml
  • Crushed orange - 20ml
  • Milk - 150ml

Method
Add fresh fruits, crushed strawberry, orange, ice cubes and milk in a mixing jar.
Mix well and serve chilled.

CUCUMBER POMEGRANATE SALAD

Ingredients

  • Diced cucumber - 300gm
  • Pomegranate - 40gm
  • Yogurt - 60gm
  • Flax seeds - 5gm
  • Salt - 2gm
  • White pepper - 1gm
  • Honey - 20 ml
  • Pomegranate syrup - 10 ml
  • Panini bread
  • Butter on bread

Dressing
Add honey, pomegranate syrup, hung curd with salt and pepper.

Method

  • Put dressing in a bowl and toss it well with diced. cucumber and pomegranate.
  • Mix it well and add flax seeds on top.
  • Serve salad along with Panini bread.

SLIMMER’S OLIVE SALAD (VEG.)

Ingredients

  • Carrot - 40gm
  • Broccoli - 45gm
  • Spring onion - 15gm
  • Green peas - 25gm
  • Beans - 34gm
  • Red cabbage - 30gm
  • Lettuce ice burg - 35gm
  • Tomato dice - 35gm
  • Black olive - 20gm
  • Salt - 2gm
  • Pepper - 2gm
  • French dressing - 30g

Method
Take a mixing bowl and put all the vegetable and mix it well with French dressing and serve it along with Panini bread.

ANTI-POLLUTION DRINK

  • Pinch of activated charcoal
  • Lemonade masala - 1½ tablespoon
  • Lemon juice     -   20ml
  • Soda                 -  120ml

Method

  • Pour soda and add lemon juice, lemonade masala and a pinch of activated charcoal into a cup.
  • Mix it well and serve chilled.
