When his chefs tried to make the Lucknow style biryani, the scarcity of money put them in a grave difficulty. It was then that he along with his chefs decided to innovate a local version of it. After, experimenting with vegetables, they finally came up with the plan of replacing the meat with potato. Hence, unlike the other varieties of Biryani, Kolkata Biryani has only one or two pieces of meat and one mandatory piece of potato.

Aminia, to this date, has been one of the prime eateries in Kolkata that serves authentic Awadhi/ Mughlai cuisine. Their most popular outlet is in the Futnani Chamber near the Kolkata Municipal Corporation in Sir Stuart Hogg Market or New Market. This outlet was established on 15th August, 1947. Today, Aminia has a total of 9 outlets across Kolkata. They have kept the interiors of all the outlets simple yet sophisticated.
