Mangalorean Soorna (yam) sukhha (Serves 4-5)

Ingredients

  • Yam/soorna- 1/2 kg
  • Mustard- 1/2 teaspoon
  • Curry leaves- 1 sprig
  • Chili powder- 1tbsp
  • Coriander powder - 1 tbsp
  • Jeera powder- ½ tbsp.
  • Garlic flakes with skin, crushed- 3-4
  • Onion finely sliced- 1 medium sized
  • Grated coconut- 1 no.
  • Thick tamarind paste extracted from 1 marble size tamarind- 1 teaspoon
  • Oil - 2 tablespoons
  • Salt - to taste

Preparation

  • Skin the yam before washing. Cut it into cubes. Wash the cubes and keep them aside.
  • Heat the oil in a kadhai and add the mustard. When the mustard stops spluttering add curry leaves and crushed garlic and saute for a few seconds.
  • Add onions and fry on a medium low heat till they turn light golden in colour.
  • Add grated coconut and continue to fry till you get a dry mixture and a nice aroma from the roasted coconut.
  • Add chili powder, jeera powder and coriander powder and fry for a few minutes taking care to see that it doesn’t get burnt.
  • Add the tamarind juice and salt to taste and the yam pieces. Pour enough water to cover the cubes – not too much.
  • Cover the pan and let the yam cook on a medium heat till the pieces turn tender. Stir in between to avoid scorching. Sprinkle more water if required and adjust the spice powder, salt and tamarind if required. When done, remove from heat
  • Serve hot

Prawns rava fry (Serves 4-5)

Ingredients

Prawns- 20nos

For marination

  • Turmeric powder- 1 tbsp
  • Red chilli powder- 1 tbsp
  • Salt- 1/2 tbsp

For the rava coating

  • Semolina/ Rava- 1/2 cup
  • Rice flour- 1/4 cup
  • Turmeric powder- 1/4 tsp
  • Red chilli powder- 1/4 tsp
  • Salt- to taste
  • Cooking oil- ½ lts tablespoons

Method

  • To begin making the rava fried prawns, de-shell and devein the prawns and wash properly.
  • Marinate them by applying salt, turmeric powder and chili powder for 30 minutes.
  • Fry the prawns.
  • Take a plate and add the rice flour, rava, pinch of salt, 1/4 teaspoon each of turmeric powder and chili powder. Mix well.
  • Coat the prawns in the rava and rice flour mix. Ensure that it is fully coated.
  • Deep heat the frying pan and spread 1 tablespoon of oil. Add more if required.
  • Place the rava coated prawns on the pan and fry on low flame. After 5 minutes, turn them to the other side.
  • Fry for 10-12 minutes.They are done when they turn golden brown.
  • Fry prawns on low flame. Do not cover while frying.
  • Serve rava fried prawns hot as a starter
